Spooky season is upon us at last and we’re here to help you celebrate the Cajun way with some Halloween treats! Whether you’re hosting a Halloween party, attending one and want to bring some goodies along, or just want to get into the spirit at home with your loved ones—this fearful and festive fare is sure to liven things up.
Boudin Spider Sliders
For most of us, boudin is simply a heat-it-and-eat-it food, but it goes great on a bun as a burger substitute once you’ve cut it out of its casing! If you want proof, give these boudin “spider sliders” a try: miniature boudin burgers with a spooky spider leg twist that will put most Halloween treats to shame.
What you’ll need:
- Slider buns
- Spicy mayo
- Gator Pickles
- Loose boudin
- Swiss cheese
- Fried onions (you can also use pretzel sticks)
How to make it:
- Cut open the slider buns and apply the spicy mayo and a few Gator Pickles to each.
- Cut open a few links of boudin and form the mixture into patties.
- On a preheated and oiled skillet, heat the boudin patties and melt the swiss cheese.
- Put the boudin patty on the bun and apply 4 fried onion “legs” to each side to give it a spider-leg effect.
- Close up and enjoy!
Swamp Deviled Eggs
Virtually everyone loves a deviled egg at a party but you can really take them to the next level by putting both a Cajun and spooky twist on them simultaneously. By making the mixture a spooky green color and topping them with a delightful cracklin crunch, these little swamp devils are a surefire hit.
What you’ll need:
- 12 eggs
- Mayo/mustard
- Green food coloring
- Dill relish
- A handful of seasoned cracklins
How to make it:
- Boil the eggs (put on high heat until they start to boil, remove from heat and cover for ten minutes, then change out water and add ice; chill for ten minutes).
- Peel and dry the eggs before halving them and dropping the yolks into a bowl.
- Mash up the yolks with a fork or potato masher.
- Add a quarter cup of mayonnaise, two teaspoons of mustard, salt and pepper (to taste), and a two tablespoons of dill relish to the yolk mixture.
- Add drops of green food coloring to the mixture until you achieve the desired effect (roughly 6-8 should do it).
- Spoon the mixture back into the egg whites (or you can use a plastic bag with a corner cut off to pipe them).
- Pulverize some cracklins (you can use a food processor or put them in a bag and hit the bag with a rolling pin).
- Sprinkle the pulverized cracklin bits on top and serve!
Yummy Mummy Sausages
Wrap it up! Everyone loves a pastry-wrapped sausage, and with a little creativity you can make one into a mummy that will (ironically) be the life of the party. Not only are these Halloween treats delicious and hilarious, they’re a cinch to make!
What you’ll need:
- Smoked sausage of choice
- Crescent roll dough wrapping
- Edible eyes (optional)
- Dat Dip (or dipping sauce of choice)
How to make it:
- Preheat the oven to 400 F.
- Roll out the crescent roll dough and cut it into strips.
- Wrap the sausages in the pastry dough, mummy style.
- Bake in the oven for 20 minutes or until golden brown.
- Adorn with edible eyes and serve with dipping sauce.
Pepper Jack-O’-Lanterns
Here’s a trick or treat that’s super simple, filling and delicious! Essentially, it’s a boudin stuffed bell pepper with a jack-o’-lantern face and a cheesy top. This one is more than just a festive party favorite—it can be a spooky family meal if you serve it with a side!
What you’ll need:
- Bell peppers
- Loose boudin mixture
- Shredded pepper jack cheese
- Chopped green onions
How to make it:
- Preheat the oven to 350 F.
- Cut the top off of the bell pepper and remove the ribs and seeds.
- Using a small paring knife, carefully cut a jack-o’-lantern face out of the bell peppers.
- Fill the cavity of the bell pepper with loose boudin mixture and top with pepper jack cheese.
- Bake uncovered (with the tops on the side) for 25-30 minutes or until the internal temperature reaches 165 degrees.
- Top with chopped green onion and gently replace the lid.
- Serve and enjoy!
Witches Cocktail
A creepy Cajun twist on a shrimp cocktail that’s sure to be as provocative as it is delicious: the Witches Cocktail is a little controversial due to the inclusion of fried frog legs—and of course deep frying means it’s a bit more on the difficult side, but we think you’ll be impressed with the result!
What you’ll need:
- Frog legs
- 3 eggs
- Vegetable oil
- Flour
- Seasoning blend of choice
- Cocktail sauce
- Romaine lettuce
- Cocktail glasses
- Lemon wedges
How to make it:
- Heat a pot of oil on the stove to 350 F.
- Whisk the three eggs together in a bowl.
- Combine your seasoning blend and flour.
- Wash each pair of frog legs in the eggs and toss them in the flour, covering the entirety of the legs.
- Chop some romaine lettuce and put it in the glasses.
- Top the lettuce with the cocktail sauce.
- Fry the frog legs in the oil until golden brown (about 4 minutes on each side)
- Carefully place them feet-up around the glasses.
- Adorn with lemon wedges and enjoy!
