RECIPE: Spicy Cajun Smothered Cabbage

The New Year may have come and gone, but delicious cabbage is always a great option in any season! As a versatile and flavorful leafy green that’s packed with nutrients, cabbage dishes are always good luck. Not only is cabbage healthy and delicious, it’s highly affordable, and that’s a more relevant attribute than ever! Whether it’s the main event or just a side dish, this spicy and meat-laden cabbage dish is sure to become a regular in your culinary oeuvre!

 

What You’ll Need

One of the beauties of smothered cabbage lies in its simplicity: this dish is easy and quick to prepare and requires minimal ingredients, even in the case of this souped-up Cajun variant! Less prep, ingredients, and clean-up is always a recipe for making life easier. For this dish, you’ll need:

  • 4 teaspoons Cajun seasoning
  • ½ teaspoon crushed oregano
  • ½ teaspoon crushed thyme
  • 2 tablespoons butter
  • 1 small onion sliced thin, about 1 cup
  • 3 cloves garlic minced
  • ½ large head of green cabbage sliced very thin, about 6 cups
  • 2 tablespoons chicken broth
  • 1 cup chopped tasso
  • 1 cup sliced smoked green onion sausage

 

Making the Smothered Cabbage

  1. Combine the Cajun seasoning, oregano, and thyme in a small bowl. Melt the butter in a skillet over medium-high heat, add the onion, and stir until the onions are softened (usually 4-5 minutes). Add the minced garlic and cook for another 1-2 minutes or until the garlic is fragrant.
  2. While continuing to stir the onion and garlic mixture, and being careful not to burn the butter, add the sausage and tasso and cook until the outside is caramelized and browned.
  3. Add the cabbage and toss to combine with the other ingredients. Reduce the heat to medium, add the water for steam, and cover with a lid. Cook while occasionally removing the lid and stirring. Keep doing this for about 5-6 minutes or until the cabbage begins to soften.
  4. Add the spices and herbs and stir well to combine. Leave the cabbage uncovered and cook for another 2-3 minutes or until the cabbage is tender. Feel free to add additional seasoning to taste.

Once your cabbage is ready, it’s time to eat—but you don’t have to serve this delicious dish solo! You can go for the New Year’s tradition of black-eyed peas (they’re a great combo all year round), and adding some smoked boudin can give them an extra Cajun kick!
